Buttermilk waffles with roasted banana, spiced butter and maple syrup

It’s the ultimate indulgent breakfast, brunch or even dessert – waffles! With this easy recipe, we’ve added irresistible caramelised bananas, a moreish spiced butter and the mandatory drizzles of maple syrup. More please!
You’ll need an electric waffle iron for this recipe.
Ingredients (12)
- 2 cups (300g) self-raising flour
- 1 tsp bicarb soda
- 2 tsp caster sugar
- 2 large eggs
- 90g unsalted butter, melted
- 2 cups (500ml) buttermilk
- 4 bananas
- 1 tbs brown sugar
- Maple syrup, to drizzle
Spiced butter
- 150g salted butter, softened
- 1 1/2 tsp vanilla bean paste
- 1 1/2 tsp mixed spice

1.For the spiced butter, whisk all ingredients in a medium bowl until fully combined. Transfer to a small ramekin and set aside (chill, covered, if not using straight away).

2.For the waffles, sift flour, bicarb and a pinch of fine salt into a bowl. Add caster sugar, eggs, butter and buttermilk, whisking until smooth, then set aside for 10 minutes.

3.Preheat an electric waffle iron.

4.Meanwhile, peel bananas and halve lengthways. Heat a large frypan over high heat. Melt a little spiced butter, then sprinkle with brown sugar. Cook for 1 minute, or until sugar melts and starts to bubble. Place banana halves cut-side down, pressing into sugar, and cook for 1-2 minutes, until caramelised. Transfer bananas, caramel-side up, to a plate.

5.Stir batter to loosen the texture (it thickens on standing). Pour batter onto preheated waffle iron and cook according to the manufacturer's instructions. Repeat with remaining batter to make 5 waffles.

6.Cut each large waffle into 4 smaller waffles. Serve piles of waffles with bananas, spiced butter and maple syrup.
