Sticky date apple crumble

Everyone loves an apple crumble. Here we’ve added chopped dates to the crumble mix which, when baked, turn into delicious chewy bites. And there’s plenty of caramel sauce to drizzle over to make everyone extra happy.
You’ll need a 25cm (top measurement) round ceramic pie dish for this recipe.
Ingredients (11)
- 5 Granny Smith apples, peeled, cored, 3 cut into wedges, 2 cut into chunks
- 1/3 cup (80g) firmly packed brown sugar
- Juice of 1 lemon
- Vanilla ice cream, to serve
- Caramel sauce, to drizzle (we used Bonne Maman)
Crumble
- 2/3 cup (100g) plain flour
- 1/4 cup (60g) firmly packed brown sugar
- 75g cold salted butter, chopped
- 2/3 cup (60g) rolled oats
- 6 (120g total) medjool dates, pitted, chopped
- 1/3 cup (45g) pecans, chopped
Method

1.Place the apple wedges in a medium saucepan with the sugar, lemon juice and 2 tbs water. Cook, stirring occasionally, for 10 minutes, or until apple starts to break down. Remove from heat and stir through the apple chunks

2.Preheat oven to 200°C/180°C fan-forced.

3.To make the crumble, combine flour, sugar and butter in a large bowl. Using fingertips, rub the butter into the dry ingredients. Stir through oats, dates and pecans.

4.Spoon apple mixture into a 25cm (top measurement) round ceramic pie dish. Crumble over the flour mixture. Bake for 40 minutes, or until top is golden and crisp, and base is bubbly.

5.Stand for 10 minutes. Serve with ice cream and a drizzle of caramel sauce.
Recipe Notes
Leftovers will last, covered, in the fridge for up to 5 days.
