Take your next cheeseboard to a whole new level with this irresistibly gooey baked cheese, baked right in its rustic wooden box until molten and bubbling. This is crowned with caramelised figs, toasted hazelnuts, aromatic thyme and eschalot, mellow honey and a cheeky splash of brandy. Every scoop delivers the ultimate moreish mix of savoury, sweet and nutty flavours.

Ingredients (9)
- 250g Fromager des Clarines, or other washed rind cheese sold in a wooden box
- 1 1/2 tbs hazelnuts, toasted, very finely chopped
- 1 eschalot, very finely chopped
- 3 tsp finely chopped thyme leaves
- 1 tbs brandy
- 1 large fig, trimmed, cut into thin wedges
- Honey, to drizzle
- Olive oil cooking oil spray
- Toasted baguette, to serve

1.Preheat oven to 240°C/220°C fan-forced.

2.Leave cheese in the wooden container (but make sure to remove any plastic wrapping) and, using a small knife, cut a crisscross pattern on top of the cheese. Place on a baking tray.

3.Combine nuts, eschalot and thyme in a small bowl. Drizzle cheese with brandy, then sprinkle with nut mixture. Arrange figs on top and drizzle with honey. Season with freshly ground black pepper and spray with oil. Roast for 10-15 minutes, or until figs start to caramelise.

4.Serve with toasted baguette for dipping.
