This recipe is proof that simple can be totally delicious. There are three tricks to make the magic happen here. Make sure your tomatoes are at room temperature, season them generously with salt, and let them sit and render their beautiful juices while the pasta cooks. The result is a bright, flavour-packed feast that’s ready in just 15 minutes!

Ingredients (6)

  • 500g baby tomatoes, halved (we used a mix of coloured baby roma tomatoes)
  • 3 tomatoes, thinly sliced (we used roma and Kumato)
  • 1 garlic clove, crushed
  • 2 tbs chopped oregano leaves, plus extra small leaves, to serve
  • 500g short pasta (we used casarecce)
  • 100ml extra virgin olive oil

Method

  • 1.
    Place tomatoes, garlic and chopped oregano in a large bowl and season generously with salt flakes. Set aside.
  • 2.
    Cook pasta in a large saucepan of salted boiling water following packet instructions until al dente. Drain well and add to tomatoes with oil. Toss to combine and season with freshly ground black pepper. Serve sprinkled with extra oregano leaves.

Recipe Notes

Use whichever tomatoes are looking ripe, and cut them into different shapes, depending on their size.

Leftovers will last in an airtight container in the fridge for up to 3 days.
